Recipes for a St. Patrick's Day Celebration

St. Paddy's Day is a great holiday to celebrate Irish traditions and cuisine. What could be better than a nice hearty stew made with Guinness. Serve with traditional Irish Soda Bread and you have a delicious St. Paddy's Day dinner to impress your friends and family.

Irish Beef and Beer Stew

You will need:
2 tbsp olive oil
2 lbs beef set meat cut into 1 1/2 inch squares
1 large onion, chopped
4 cloves garlic, minced
1 tsp thyme
1 tsp rosemary
2 bay leaves
2 tbsp flour
2 cups cup beef stock
3/4 cup dark beer, such as Guinness
1 1/2 cups potatoes, such as yukon gold, chopped into 1 1/2 inch squares
1/2 lb carrots, sliced in to 1/2 inch rounds
salt and pepper to taste

Preheat your oven to 350 degrees. In a large heavy bottomed sauce pan, and heat the olive oil. Meanwhile toss the meat with the flour. When the oil is hot add the meat and brown on all sides. Add the onion to the beef and cook until the onion is softened. Reduce the heat, add the bay leaves, garlic, thyme, rosemary and stir.

Next add the stock, beer, potatoes and carrots. Season with the salt and pepper, stir until mixed and bring to a boil. Then reduce to a simmer and cover.

Move the pot to the oven and cook, covered, stirring occasionally until the meat is tender, approximately 2 to 3 hours.
