Mother's Day Breakfast in Bed

Are you ready to make the greatest mom you know breakfast in bed?  While camping?  Don’t worry, it isn’t as hard as it seems!  With these two fool-proof menus, you’ll show her just how much she’s appreciated.  Be sure to plan ahead for those special touches – a cup of her favorite tea or coffee, flowers, a hand-made card or gift, and anything else that will make her feel truly special.

MENU 1
Chocolate Chip Pancakes
Bacon
Fruit Salad
Orange or cranberry juice mixed with fizzy water for a special treat

Instructions:
Arrange your fire so that there’s a flat space for your skillet.  A metal grate is ideal for this purpose, but if you don’t have one, you can use large rocks or sizeable logs laid side by side.  Heat your skillet with a little oil or butter.

In a bowl, combine water and Bisquick , following the directions on the package.  When the skillet is hot (when freshly-added butter sizzles), drop in spoonfuls of batter.  As the pancakes start to cook, sprinkle them with chocolate chips.  When bubbles start to rise in the batter, flip the pancakes and cook them on the other side.

When your pancakes are finished, add bacon to the same pan and cook on each side until done.  Make a fruit salad by combining all of her favorite fruits – grapes, cantaloupe, watermelon, strawberries, pineapple, oranges, etc.  This is a great project for the kids to help with.

Egg and potato scramble with seasonal vegetables
Campfire Toast with Jam
Mocha (mix equal parts coffee and hot cocoa)

Instructions:
Heat your skillet as directed above until freshly-added butter sizzles.  While the skillet is heating, chop up mom’s favorite vegetables: peppers, tomatoes, asparagus, artichoke hearts, zucchini, yellow summer squash, spinach, etc.  Make sure the zucchini and squash are thinly sliced so they’ll cook all the way through.  

Dice potatoes into a bowl, keeping the pieces fairly small.  If you have the time before your trip, microwave a few potatoes for 3-4 minutes.  You can microwave them whole.  Just pierce them with a knife in a few places.  Keep the cooked potatoes in the cooler and cut them up before you begin cooking.  This will save you a lot of cooking time, since your potatoes only need to be heated and browned.

When your skillet is hot and oiled or buttered, crack in eggs (1-2 per person) and add the vegetables.  Don’t let the scramble stick to the pan.  Keep flipping or stirring your scramble until the eggs are cooked and everything is piping hot.  Remove the scramble to a plate and add more butter to your pan, then drop in the potatoes and cook until browned.  Season with salt and pepper and serve.

To make toast, you can lay buttered pieces of bread face down in your skillet, or skewer pieces with a pointed stick and toast your bread the way you would a hot dog or marshmallow.  Just don’t let it catch on fire!

Breakfast in Bed Tips
While breakfast in bed is the ideal, it may be hard to keep mom in bed on a camping trip.  Campfire meals can take a while to cook, and mom may enjoy watching the family work together to produce this fun meal.  Try to be flexible and let her sit up and watch in a place of honor if she wants.  This will also allow her to eat as the food comes off the fire, while it’s still hot.  If you have small children, you may want to assign one or two of them the task of entertaining mom while the food is cooking.  They can sing songs or tell her all about their camping adventures.
