Recipes for a Romantic Summer Dinner

This summer if you would like to surprise your loved one with a romantic dinner, here is a fantastic menu option for a delicious and romantic dinner.

Grilled Steak and Fresh Vegetables

One of the most delicious dinners you can make is a nice fresh grilled steak served with seasonal, grilled vegetables. Vegetables grilled on the barbecue have amazing flavor. Summer provides you with a great opportunity to enjoy a wide selection of fresh and in-season vegetables. If you happen to be a vegetarian or prefer not to eat red meat, you can substitute fresh salmon for the steak.

Steak
Choose steaks of even size. There are a variety of cuts that you can try, one great grilling steak is the Strip Sirloin is a delicious option. Grill the steaks over high heat on a gas or charcoal grill. Cook each side over high heat until each side is well browned.  Reduce the heat and continue to cook until you reach the desired level of doneness, from rare to well-done.

Grilled Vegetables
Choose a wide selection of fresh in-season vegetables. My personal favorites include eggplant, summer squash, onions, and bell peppers. Other good options include zucchini, tomatoes and more. Rinse all vegetables off thoroughly. Chop all vegetables into 1 inch pieces. Either place in a grilling basket or slide onto skewers. Lightly coat the vegetables in olive oil and grill until vegetables are done through and slightly browned.

Chocolate Covered Strawberries
2 cups fresh strawberries
4 oz bittersweet chocolate

Start by thoroughly rinsing and drying your strawberries. Next chop the chocolate. Prepare to make the strawberries by lining a baking sheet with parchment paper.

Melt the chocolate in the microwave or using a double boiler. Make sure the chocolate is thoroughly melted and smooth, whisk often while melting the chocolate.

Once the chocolate is melted, hold the stem of the strawberries and dip each one in the chocolate. Place each strawberry on the baking sheet. When all of the strawberries are dipped and placed on the baking sheet, put the baking sheet in the refrigerator and cool the strawberries.

Classic Champagne Cocktail
Chilled Champagne (substitute a sparking cider for a non-alcoholic treat)
1 sugar cube
2-4 dashes Angostura bitters
Lemon twist

Drop the sugar cube into the bottom of a chilled champagne flute. Moisten the sugar cube with a few dashes of bitters. Pour the champagne over the sugar cube, and garnish with a lemon twist.
