Holiday Cookie Recipes | Gingerbread & Shortbread Recipes

The holidays are a great time to try out new and traditional recipes. Maybe you have some recipes that you enjoy making as a family each year, or perhaps you would like to try something new. No matter what you are looking to do this holiday season, there are plenty of options to enjoy trying new things and spending time with friends and family. Here are a few fun ideas for everyone to enjoy.

Gingerbread Cookie Recipe

You will need:
3 cups flour
3/4 cups brown sugar, packed
1 tbsp cinnamon
1 tbsp ground ginger
1/2 tsp ground cloves
1/2 tsp nutmeg
3/4 tsp baking soda
12 tbsp butter, slightly softened and cut into tbsp size pieces
3/4 cup molasses
2 tbsp water

Combine dry ingredients in a mixing bowl. Next mix together the butter, sugar, molasses and water until the mixture is smooth. Gradually add the dry ingredients to the butter mixture, stirring, until all of the dry ingredients are mixed with the wet ingredients.

Remove the dough from the bowl and divide into 3 or 4 sections. Wrap the sections in plastic wrap or parchment paper and chill for about 2 hours. Preheat the oven to 325 degrees. Using one part of the dough at a time, roll out on a lightly floured surface, until the dough is approximately 1/8 to 1/4 inch thick. Cut the dough into the desired shapes and place finished cookies on a parchment paper lined baking sheet. Repeat the steps with each section of the dough until you have no dough remaining.

Bake the cookies for about 15 to 20 minutes. They should be a little bit darker, and firm in the center. Cool the cookies and decorate as desired.

Shortbread Recipe

You will need:
2 cups flour
2/3 cup powdered sugar
14 tbsp butter, cold, cut into tbsp sized slices

Preheat your oven to 325 degrees. Grease a 9 inch round cake pan. Combine powdered sugar, and flour. Using a food processor, stand mixer or hand mixer, mix the butter in a large bowl until it is creamed. Add the flour and sugar mixture, beating on low until the dough begins to stick together and pulls away from the bowl.

Press the dough into the the greased cake pan. Gently score the surface of the dough into wedges, like a pizza. Then prick the surface of the dough with a skewer. Bake for about 45 to 50 minutes, until the shortbread is just starting to become darker and the center is firm. Place pan on a wire rack and allow the shortbread to cool. Finish by cutting into wedges where the score marks were placed.
