Biscuits and Sausage Gravy Recipe
Making Biscuits and Gravy is actually simpler than it sounds. Although the biscuits do take some time to make, they are surely worth the extra work, since they will be warm, and taste as fresh as possible. If you don't have time you can always substitute with pre-made biscuits that you only have to cook, however, the flavors won't be quite the same.
To make biscuits:
2 Cups all-purpose flour
2 1/4 teaspoons baking powder
1/2 teaspoon table salt
1 1/2 cups cream or whole milk
Preheat oven to 450 degrees. Start by thoroughly mixing the dry ingredients. With a wooden spoon or spatula mix in the milk or cream. Stir the milk in until the dry ingredients are moist and are just starting to form a ball. Gather the dough into a ball and on a lightly floured work surface knead the dough briefly, approximately 5 to 10 times or 30 seconds.
To shape the biscuits, shape dough into a circle and roll out with a lightly floured rolling pin until dough is about 1/2 to 3/4 inch thick. Cut into rounds with a lightly floured biscuit cutter or drinking glass. When the rounds are cut out there will be some scraps, which can be gathered, reshaped and cut into more rounds.
Place biscuit rounds on an ungreased baking sheet and bake for 10 to 15 minutes or until golden brown on top.
While your biscuits are baking prepare the Sausage Gravy.
To make Sausage Gravy:
1/2 to 1 lb bulk sausage (spicy or breakfast sausage)
1 to 2 tablespoons all-purpose flour
1 cup milk
Salt and Black Pepper to taste
In a large skillet over medium heat brown the sausage. Stirring and crumbling as you brown, until sausage is completely browned. Leaving the sausage in the skillet, but skim a bit of the fat from the sausage with a paper towel, but be sure to leave at least 2 tablespoons of fat in the skillet.
With the skillet still over medium heat, add the flour one tablespoon at a time, stirring constantly. Only add as much flour as you would like to make the gravy the desired consistency. Make sure that the flour is browned, about 5 minutes. Cooking the flour will remove the raw flour taste, making a better flavored gravy.
When the flour is brown, add the milk to the flour and sausage mix. Cook the gravy over medium heat stirring constantly until the gravy is the desired thickness. Stir in the salt and black pepper to taste.
Place 2 warm, freshly baked biscuits on each plate and pour hot gravy over the biscuits. Serve the hearty biscuits and gravy with a fresh fruit bowl.
Find fresh fruit like grapes, cantaloupe, strawberries and grapes, depending on what is in season. Thoroughly wash the fruit, remove and stems and cut larger fruits into bite sized pieces.
